at One&Only Le Saint Géran

Located on a tropical peninsula, flanked by warm ocean and a tranquil lagoon, One&Only Le Saint Géran has emerged entirely transformed following a multi-million-dollar investment, introducing the legendary resort into a modern-day icon. Long celebrated as the legendary luxury retreat in Mauritius, One&Only Le Saint Géran retains what guests have always loved - a sense of exclusive seclusion on its own private peninsula with a beachfront and calm lagoon unlike any other resort on the island. The entire resort has been completely reborn, with a fresh beach-inspired aesthetic, new playful swimming pools with cabanas, reimagined public spaces, a stunning new spa, Club One, and dynamic dining experiences.

The culinary offering at One&Only Le Saint Géran has been completely reimagined, introducing new restaurants, dining experiences and cuisines. The flavours and culture of the island are reflected in the culinary experience of every restaurant across the resort, with spices, rums and seasonal local ingredients fused together in new dramatic open cooking areas in theatrical and romantic settings.

The culinary experience is led by resort’s Executive Chef Dwayne Cheer. Chef Dwayne brings his vast experience of cooking at Europe and Asia’s most celebrated restaurants to One&Only Le Saint Géran, creating vibrant, seasonal dishes, bold flavours and experimental techniques, all collected from his extensive travels. With his signature creativity, he drives the culinary experience at One&Only Le Saint Géran, leading a talented team of chefs across six restaurants offering an incredible diversity of cuisines.

A celebration of the Asian influence of the island, and a nod to the namesake at One&Only Reethi Rah in the Maldives, Tapasake offers guests gastro-inspired cocktails, theatre-style preparation of sushi, teppanyaki, batayaki and tandoor from the restaurant’s open kitchen, all served in the Spanish ‘tapas’ style of dining. Each Pan-Asian plate is created using prime ingredients and the extensive menu features light bites to share, freshly prepared sushi, dishes created on the Japanese Robata grill, Korean BBQ or in the tandoori oven. Housed in a traditional thatched pavilion, the overwater restaurant is located alongside the edge of the breathtaking lagoon offering views across green sugarcane clad mountains, an Indian temple and the glowing Mauritian sunsets. The restaurant is open for dinner from 7pm and is available to guests of the resort as well as welcoming outside guests.

PRIME, One&Only Le Saint Géran’s celebrated steakhouse, has undergone a complete transformation, introducing an ultra-modern, butchery-inspired décor and an atmospheric water courtyard seating area, embracing its wild Mauritian setting. Set upon ancient limestone flooring rescued from a 16th century French chapel, the modern airy restaurant, features soft leather seats, Arabescato Carrara marble tops, dramatic open windows and softly glowing lanterns. The restaurant, open for dinner, serves the finest cuts of Angus and Wagyu beef, fresh local seafood and seasonal produce such as heart of palm, or curcuma, the source of turmeric. An impressive wine cellar with rare vintages from all over the world provided the perfect complement to any dish, with a focus on sustainable wines. In addition, a wide selection of rum infusions honours the Mauritian history of rum distillation. Vikash Coonjan, Executive Sous-Chef at PRIME, has vivid and fond childhood memories of helping his mother in her kitchen and treasures the experience of cooking with seasonal local produce when at its best. He brings that passion and skill to PRIME, drawing on his Mauritian roots to curate incredible new dishes for guests.

With uplifting colour palettes and rustic, crafted furnishings, L’Artisan, is an artisanal bakery and specialist coffee lounge, offering informal and light food selections and perfectly crafted, barista-poured beverages. Serving healthy, light bites, a selection of vegetarian dishes, fresh salads and sandwiches as well as tempting hand-made pastries and desserts, at any time of day, either to enjoy in the relaxed welcoming café atmosphere, or to pick up for an outside excursion. With its perfect setting and cosy atmosphere, L’Artisan becomes the La Terrasse dessert court at night.

At the heart of the resort, La Terrasse restaurant has been reborn, closer to the azure waters of the ocean to provide even more stunning views and with distinctive new overwater dining pavilions. Celebrating the intimacy of theatre-style cooking, the reosrt’s chefs welcome guests into their kitchen, eager to interact as they create delicious Mauritian, Indian, Chinese and Mediterranean delicacies in front of their eyes, for both breakfast and dinner. Live music is performed nightly, mixing with the sound of tropical birdsong and wafts over the water from a new stage located in the pool at the very centre of the pavilions.

Located on the water’s edge, beneath the tropical sway of the Badamier trees with unfiltered views of the Indian Ocean, Le Badamier is a casual yet chic lunch spot serving freshly caught grilled fish and seafood, perfectly accompanied with chilled wines. At sunset, flaming lanterns and candlelight transform it into a magical setting for romantic cocktails under a canopy of stars.

Le Carré Lounge sits above La Terrasse and offers wide terraces overlooking the deep blue ocean and expansive skies and is open from 7am until 11pm. The bright and contemporary interior with locally sourced art creates the perfect place for guests to relax, read a book, enjoy a board game or play cards after dinner whilst relishing the resort’s happenings from above. Le Carré is the new home of Head Concierge, Burty Armance and his Team. Burty has been at One&Only Le Saint Géran for 24 years and is passionate about inspiring guests to explore the beautiful island and the new and exciting experiences the resort has to offer.
