If anyone should know this it’s the French culinary master, who has travelled the globe on a gastronomic quest, honing his own cuisine to four-stars perfection. It was on a recent trip to Venice that Alléno came across Damien Hirst’s Treasures From The Wreck Unbelievable exhibiton, an experience that inspired a new menu at 101 Dining Lounge and Bar.
