Gastronomy Designed by Multi-Michelin-Starred Yannick Alléno

Located on the tip of The Palm’s West Crescent, One&Only The Palm offers guests the chance to escape the bustling city and enter an exclusive island enclave. Complete with its own private marina and accessible by boat or via a scenic drive, this elegant retreat might be minutes from the heart of Dubai, but it feels like a million miles away. Inspired by the architecture of Andalusia’s Moorish palaces, One&Only The Palm’s modern Arabesque design curates a feeling of calm sanctuary that celebrates the destination.

Three Michelin-star chef Yannick Alléno curates the dining experiences throughout the resort. Nicknamed ‘Prince of the Palaces’ in reference to his position within the elite circle of the world’s greatest chefs, Alléno is known for his passion to create, innovate, taste and play with ingredients in order to elevate them to something extraordinary. Using reinvention as his canvas, he creates culinary artworks that derive from tradition but journey to a place of discovery and wonder. 

From creative fine dining, Middle Eastern cuisine made with local ingredients, to laid-back but lavish afternoon teas with a touch of Arabian flair and jetty-side sunset dining, One&Only The Palm offers a diverse array of dining experiences for every mood. The voyage begins at ZEST, where dining artfully blends flavours from the Middle East, Asia and the West. Locally inspired mezze is created from prime ingredients alongside fresh seafood and the finest cuts of beef from two theatrical show kitchens. The extensive menu features everything from light bites to share and freshly prepared sushi, to farm-fresh salads and desserts handmade by artisans. Buzzing from sunrise to sunset, guests can linger over a long lunch on its sweeping outdoor terrace or enjoy breakfast gazing at the resort’s iconic pool from its floor-to-ceiling windows. Housed in the Manor House, with its glass leaf Arabesque motifs and cut quartz crystal chandeliers, guests will first get the hint that dining at One&Only The Palm is an experience like no other. On weekends, ZEST’s lavish brunch draws an urbane crowd of local residents and guests who come for a fusion of flavours served in a refined setting.

Building on techniques honed in the kitchens of France that won him the highest honours in the cooking world, STAY by Yannick Alléno, was one of only two restaurants in the city awarded two Michelin stars in Dubai’s inaugural Michelin Guide in June 2022.

Fine dining at its most playful, traditional cooking methods are married with modern culinary advancements to create a seasonally evolving menu of signature dishes and tasting menus. From creative starters such as Yannick’s delicate “King Crab Topped with Farmhouse Cream, Nori Seaweed Broth and Fresh Herbs”, to the finest milk-fed lamb maturated for 12 days in a salt moss cave, the dining experience at STAY exceeds expectations. The dramatic monochrome dining room sticks to a palette of black, bronze and silver – with splashes of rich burgundy and high timbre walls for a touch of theatre. Baroque black crystal chandeliers suspended from vaulted ceilings cast a gentle spotlight on Yannick’s witty dishes and highlight the intentional lack of stuffiness in service. Interactive culinary experiences encourage guests to immerse themselves further into the STAY by Yannick Alléno way, be it at the Pastry Library, where guests assist the Chef De Patisserie in creating their own desserts, or the private dining area complete with signature dishes, pastries and exclusive wine list.

Perched above the Arabian Gulf, 101 Dining Lounge and Marina is one of Dubai’s most loved alfresco dining destinations. Serving a refined seafood menu, the concept takes inspiration from the renowned artist Damien Hirst’s exhibition, Treasures from the Wreck of the Unbelievable. Every aspect – from the intricately designed ‘fish scale’ tableware to an elevated menu of the finest seafood – celebrates the restaurants ocean-side location. Fusing age-old cooking techniques such as smoking, salting and fermentation, fresh sustainably sourced seafood is presented in a modern artistic style. Designed to deliver more than what it first appears, dishes are not what they seem, revealing hidden depths of flavour or inspired bursts of texture inviting diners to dive into the deep. 101 Dining Lounge & Bar’s private dining area offers sea views through its futuristic, coral-inspired cocoon. A customisable LED floor creates bespoke vistas underfoot, perfect for adding a personal touch for your next soiree.

Adjacent to the resort’s private marina, the overwater terrace boasts glittering views over the city skyline. Accessible by yacht or jetty from One&Only The Palm, the chic lounge opens out to sprawling overwater seating. At night and on weekends, the resident DJ and live entertainment brings a vibrant life and energy as the tempo shifts from day to night. 

The Lounge provides a comforting sanctuary for Afternoon Tea, light snacks, and refreshments in the Manor House, while 24-hour in-room dining provides guests with the perfect reason to linger a little longer within the comfortable privacy of their guest room or suite.
