During the inaugural edition of the Michelin Guide in Dubai, STAY by multi-winning star Chef Yannick Alleno was awarded with coveted two Michelin stars amongst only two restaurants in the city.

Fine dining at its most playful, traditional cooking methods are married with modern culinary advancements to create a seasonally evolving menu of signature dishes and tasting menus. The style of cooking here offers guests a French base, that takes a ‘less is more’ approach to some outstanding ingredients. From creative starters such as Yannick’s delicate “King Crab Topped with Farmhouse Cream, Nori Seaweed Broth and Fresh Herbs”, to the finest milk-fed lamb maturated for 12 days in a salt moss cave, the dining experience at STAY exceeds expectations. Precise, sophisticated dishes are perfectly paired with flavour; beautifully conceived and skilfully crafted with an intelligent and intriguing array of textures and temperatures.

Located within the chic and glamourous One&Only The Palm, STAY is accessible by boat with its own private Marina, or a scenic drive. The restaurant offers a luxurious setting without being stuffy, and service follows suit, with staff that are attentive, professional, and personable.

Chef de Cuisine at STAY by Yannick Alleno, Renaud Dutel commented: ‘There are no words to describe the day when myself and the team learned that STAY by Yannick Alléno had been awarded two coveted Michelin stars in Dubai’s inaugural Michelin Guide. At STAY, we all come from different countries and cultures from around the world and this award is a true reflection of that it does not matter where you come from, if you work hard and as a team, anything is possible, especially in a city like Dubai. I am grateful to each of my colleagues for trusting me, and how they have grown individually and as a team.’

Chef Yannick Alleno, Culinary Director at One&Only The Palm commented: ‘I'm very proud to be one of the first chefs who came to Dubai to establish it as a gourmet destination,” said Alléno. “And Michelin is very important for the city because it means that the market is mature. There are so many restaurants of very high quality.’
