Chef Enrique Olvera at Carao

Renowned Chef Enrique Olvera helms the signature contemporary Mexican restaurant Carao at One&Only Mandarina, providing guests with an innovative epicurean experience as transportive as the destination itself.

Born in Mexico with strong culinary ties to Mexico City and Tobasco, the internationally acclaimed chef opened Mexico City’s Pujol in 2000 shortly after graduating from The Culinary Institute of America. Among other recognitions, Pujol comes in consistently towards the top of Latin America’s and The World’s 50 Best Restaurants rankings – currently number #9 on The World’s 50 Best Restaurants of 2021. With extensive experience in fine-dining and classical training, Olvera’s cooking is constantly transforming, but maintains strong roots in the techniques and ingredients of Mexico.

In 2014, Enrique successfully broke into the US market with Cosme restaurant in New York, which was named Best New Restaurant of the Year by The New York Times and currently occupies #9 on The World’s 50 Best Restaurants List. A few years later, he opened Atla in the same city, followed by Damian in the Los Angeles Arts District in 2021.

Olvera additionally owns and operates Eno in México City with four locations, is a partner of Criollo in Oaxaca, the creative chef of Manta in Los Cabos, and also, last year he inaugurated two new projects in Mexico City: Casa Teo and Molino “El Pujol.”

The chef is also author of the books: Uno (2010), En la milpa (2013), and Mexico from the Inside Out (Phaidon, 2015), and contributor to the food journal, Boomerang (2015). Tu Casa Mi Casa: Mexican Recipes for the Home Cook, is his most recent editorial project published in March (2019).
