Chef Larbi Dahrouch to host Michelin-starred chef from acclaimed The Restaurant at Meadowood and The Charter Oak
Long recognized as one of the world’s most exclusive resorts, the legendary One&Only Palmilla further raises the bar as the dining destination in Los Cabos, with a one-of-a-kind dining experience on Friday, January 5, 2018. Michelin-starred Chef Christopher Kostow, from acclaimed restaurants The Restaurant at Meadowood and The Charter Oak in Napa Valley, joins forces with One&Only Palmilla’s Chef Larbi Dahrouch, for an unforgettable evening of elevated Napa Valley inspired dishes using only fresh, local Baja ingredients.
Taking place at the resort’s picturesque, oceanfront restaurant, AGUA by Larbi, the exclusive menu prepared by Chef Christopher Kostow and Chef Larbi Dahrouch features crudo of yellowtail, chilled ‘coctel’ of spiny tail lobster, pork shoulder cooked over coals, a sweet potato ‘foster’ with marshmallow-vanilla ice cream and piloncillo-mezcal caramel for dessert. The evening’s cuisine will be paired with wines from Turnbull Wine Cellars, with a focus on small production expressions of Cabernet Sauvignon, along with live music, and an opportunity to receive signed copies of Chef Kostow’s cookbook, “A New Napa Cuisine.”
AGUA by Larbi at One&Only Palmilla has a farm-to-table dining concept, serving authentic Mexican cuisine with Mediterranean influences. The menu changes seasonally, with some menu items changing daily, depending on the fresh catch and produce available from the resort’s organic garden. Interactive dining is showcased at the restaurant, including fresh, hand-made tortillas, authentic moles and signature guacamole and ceviche made tableside. The open kitchen allows guests to observe Chef Larbi and the team at work, whilst the restaurant’s wine cellar contains the world’s largest selection of Mexican wines. AGUA by Larbi also offers guests a wealth of beverage options from the dedicated tequila and mezcal trolley, which introduces guests to the distinctive Mexican spirits, from the blanco, reposado and anejo varieties of tequila to the unique and lesser-known mezcal.
