One&Only Palmilla Welcomes Chef Sandro Falbo as Executive Chef
One&Only Palmilla, the ultra-luxury retreat located on the edge of Baja Peninsula, has announced the appointment of Sandro Falbo as Executive Chef, who will lead the vibrant food and beverage offering at the legendary resort in Los Cabos, Mexico. With the addition of Sandro to the resort’s dynamic Culinary Team, One&Only Palmilla continues to raise the bar as the ultimate dining destination in Mexico. With more than 30 years of experience across luxury properties around the globe, Chef Sandro oversees all of the resort’s restaurants and dining experiences, bringing his well-rounded appreciation and passion for the highest level of culinary excellence to One&Only Palmilla.
Born in Rome, Sandro began his career at a young age, working in several notable restaurants in the Italian city. He brings extensive experience of the luxury hospitality industry including previous roles at Waldorf Astoria in Dubai, Hilton Singapore, Bertorelli’s Restaurant in London, Intercontinental Dubai, Hotel Kempinski Beijing, Four Seasons Resort Great Exuma and Conrad Hotel Hong Kong. Most recently, Sandro was the Executive Chef of the Fullerton Hotel and Fullerton Bay Hotel in Singapore where he ran an award-winning culinary team, overseeing a total of nine restaurants and bars, in addition to catering and special events.

Sandro is responsible for the daily culinary operations of the resort’s versatile dining portfolio. The resort is home to SEARED, the signature steakhouse restaurant in partnership with Michelin-starred Chef Jean-Georges Vongerichten; Suviche, which offers guests an impressive selection of sushi and Mexican ceviche incorporating local and Asian flavors; and Agua, focusing on authentic Mexican cuisine with farm-to-table origins.
