The partnership with Tippling Club’s Ryan Clift and Arathorn Grey serves up a cocktail of fresh and innovative flavours this September with a four-hands dinner and guest shift.
Ember Beach Club at One&Only Desaru Coast is proud to present EMBER CURATES: In Good Spirits, featuring an exceptional collaborative lineup of a four-hands dinner at Ember Beach Club and a bar takeover at Dusky Monkey, showcasing curated specialities from boundary-pushing gastro-cocktail destination, Tippling Club, as well as Ember Beach Club’s very own Chef de Cuisine, Chef Bianca Palmer. Available for one weekend, Friday 22nd September and Saturday 23rd September 2023, this remarkable experience is exclusive only to One&Only Desaru Coast.
The EMBER CURATES series aims to unite distinguished chefs from Singapore and around the world in innovative collaborations with the Ember Beach Club team. Following the success of the Dioriviera pop-up event at One&Only Desaru Coast and the Andrew & Friends chef series, the In Good Spirits arm of EMBER CURATES will spotlight the fascinating world of beverages, showcasing the versatility of the destination. The upcoming collaboration marks the third edition of the series, and the first for Ember Beach Club’s newly appointed Chef de Cuisine Bianca Palmer. Hailing from Australia with over 14 years of culinary experience, Chef Bianca brings to the table a captivating fusion of culinary artistry and a deep-rooted connection to the land, present in her menus of sustainably-grown, seasonal and locally sourced produce.
Marking their 15th anniversary this year, Tippling Club has consistently raised the bar of exquisite fine dining and innovative culinary experiences to become one of Singapore’s most revered dining destinations recognised by World’s 50 Best Bars and Asia’s 50 Best Restaurants. Chef-owner Ryan Clift, who is known for his fun, playful and fresh techniques in the kitchen, offers a unique dining experience with a sense of excitement and a touch of theatre to their diners. His team of culinary talents include Head Bartender Arathorn Grey, the mastermind behind A Guide to Modern Drinking, Volume III — 6 Decades of Music, an experiential tasting of delicious classics with playful twists paired with a playlist of music’s greats.
On Saturday, 23rd September 2023, Chef Bianca and Chef Ryan will team up to offer a spectacular four-hands dinner set against the backdrop of quiet luxury at the edge of the ocean at Ember Beach Club. Featuring a unique take on modern gastronomy while showcasing the art of open-fire barbecue, a hallmark of Ember Beach Club, guests can look forward to a memorable dining experience crafted by two culinary maestros along the picturesque Malaysian coastline.
The EMBER CURATES: In Good Spirits four-hands dinner comprises of a four-course seasonal menu that will showcase culinary highlights from Tippling Club and Ember Beach Club. Diners can look forward to an avant-garde approach to gastronomy often seen in Chef Ryan’s creations, paired with modern Australian influences from Chef Bianca. In addition, the dinner menu will be complemented with a selection of specially curated cocktails by Tippling Club. Sip on inventive creations by Head Bartender Arathorn Grey, like Good Old Fashioned Lover Boy, a white brandy- and white port-based drink with delicate accents of white mint, white chocolate, framboise, and rosa, and Dear Jessie, a light and citrus-y cocktail for gin lovers.
Make your Ember Beach Club and Tippling Club experience a weekend occasion, beginning with a cocktail exploration by Head Bartender Arathorn Grey as he takes over Dusky Monkey for one evening only. Meet the man behind one of the World’s 50 Best Bars, and sample his curated line up of unique drinks that include Savoy Truffle, a tropical-style cocktail with an earthy twist using butternut squash and truffle 2-ways; Bitter Sweet Symphony, a treat for the senses and a rounder version of a Boulevadier; and It’s Only A Paper Moon, a softer, more delicate version of a classic whiskey sour and aromatic malty notes. Take in the acoustics of Malaysian nature and feel the gentle ocean breeze as the sun sets at the airy bar a day before the four-hands dinner. This experience is open to resort guests and the public from 5:00 pm to 7:00 pm on Friday, 22nd September 2023.

Both experiences are open to resort guests and the public. Seats are now available for reservation at the four-hands dinner for MYR 650 nett per person.
