Epicurean escapes at Emirates One&Only Wolgan Valley

Emirates One&Only Wolgan Valley, Australia’s ultra-luxury, conservation-based resort, is the ultimate gourmet getaway, a place where guests can eat and drink locally and sustainably, discovering the very best of the Greater Blue Mountains region’s exceptional food and wine. In the coming months, Emirates One&Only Wolgan Valley will serve up four stunning epicurean escapes to tempt food and wine lovers. Under Executive Chef Nancy Kinchela, the resort works closely with local artisan producers, sourcing seasonal and, where possible, organic produce from within a 160km radius, and showcasing local food heroes from cheese-makers to vintners, orchardists to trout fishermen.

In July, the legendary ‘Bentley Boys’ will host a gourmet getaway; in August, two exciting events await: visiting Italian winemaker Gaia Gaja will present an epic dinner and cheese tasting showcasing her world famous wines and Waterford will host a memorable Whisky Weekend; and in September, fire master and chef Lennox Hastie collaborates with Australia’s iconic R.M.Williams for a weekend of Australian adventures, from horse riding to the ultimate barbecue.

Epicurean Escape with the ‘Bentley Boys’

Friday, 28 July & Saturday, 29 July

In July, multi-award winning Chef Brent Savage and sommelier Nick Hildebrandt (the ‘Bentley Boys’), bring their fabled Bentley Restaurant + Bar to the heart of the mountains for one glorious weekend. Together with the resort’s Executive Chef Nancy Kinchela, these two legends of the food world will take guests on an unforgettable epicurean journey.

The Bentley Boys weekend kicks off with a sumptuous regionally-inspired five-course dinner by Nancy Kinchela and her talented brigade of chefs on Friday evening. On Saturday, guests can work up an appetite with bush walks and cycling, or simply kick back and take in the mountain scenery. On Saturday evening, guests will enjoy a degustation dinner created by Chef Brent, showcasing his innovative and inventive cuisine, paired with boutique wines selected by Nick from the resort’s extensive cellar.

Guests can enjoy the “Escape with the Bentley Boys” package, available as a two night accommodation package* and guests who wish to experience the Bentley dinner, a supplement will be required for dinner on Saturday 29 July

Wine & Dine with Gaia Gaja

Saturday, 6 August

In August, the resort will welcome celebrated winemaker Gaia Gaja to the Greater Blue Mountains. Established in 1859, the Gaja winery is recognised worldwide for its exceptional Piemonte reds, and its Barbaresco is considered to be one of the world’s great wines. Guests have a rare opportunity to meet Gaia, a distinguished vintner and the fifth generation to work at the Gaja winery, and to gain a unique insight into the world of fine Italian winemaking.

On Saturday, 6 August, together with Executive Chef Nancy Kinchela, Gaia will present an indulgent five-course truffle-inspired dinner, artfully paired with award-winning Gaja wines. Following dinner, guests will also have the opportunity to explore the resort’s walk-in wine cellar and indulge in a cheese and wine tasting, hosted by Gaia and the resort’s Sommelier Gary Olasz.

Waterford Whisky Weekend

Friday, 18 August & Saturday, 19 August

In August, the House of Waterford, makers of the world’s most beautiful crystal, hosts a winter weekend getaway for connoisseurs. On Saturday, 19 August, guests can enjoy a fireside whisky tasting masterclass, learning about the art of whisky blending from Chivas Regal ambassador Rachel MacDonald. In the evening, Chivas Regal, in collaboration with the culinary team at Emirates One&Only Wolgan Valley, presents a degustation dinner with a difference; matching beautiful, seasonal dishes to different whisky blends, presented in a dazzling array of Waterford crystal. And to finish the evening, guests can retire in their ultra-luxury villa for a nightcap served in their own beautifully monogrammed Waterford crystal tumblers.

The Ultimate Australian Weekend

Friday, 1 September, Saturday, 2 September & Sunday, 3 September

In September, Emirates One&Only Wolgan Valley, together with iconic Australian brand, R.M. Williams and guest chef Lennox Hastie of Firedoor restaurant, will host the ‘Ultimate Australian Weekend’. Guests will experience unforgettable bushland adventures, stunning local cuisine and wines, campfire tales under starry skies and the spectacular surrounds of Australia’s ultra-luxury resort. They will also gain a unique insight into the world of a truly iconic Australian brand and enjoy a gourmet barbecue prepared by one of the country’s hottest chefs.

Terry Goodear, Head of Heritage for R.M.Williams, will add a distinctive Aussie character to the weekend, from leading a trail ride through the stunning Wolgan Valley with a morning tea on Saturday morning, through to stargazing post-dinner accompanied by traditional tales of the bush and stories about R.M.Williams, the man and his legend.

The weekend will truly be an Australian culinary tour de force, showcasing regional food and wines curated by the Emirates One&Only Wolgan Valley team. On Saturday, Lennox Hastie will cook over open fire, serving up the ultimate barbecue by the 1832 Homestead. Lennox is one of Australia’s most talented chefs, having spent his early career working with Victor Arguinzoniz at Etxebarri, a small asador famous for cooking over fire and rated #6 on the World’s 50 Best Restaurants. Since returning to Australia, Lennox has opened the celebrated Firedoor in Surry Hills, and now works instinctively with fire and fresh ingredients to create his unique style of wood fired cuisine.
