Vincent Wallez is the Executive Chef at One&Only Palmilla, the ultra-luxury retreat located on the edge of Baja Peninsula. Chef Vincet leads the vibrant food and beverage offering at the legendary resort in Los Cabos, Mexico, which continues to raise the bar as the ultimate dining destination in Mexico. Joining One&Only Palmilla in 2022, bringing more than 20 years of experience across luxury properties.

Originally from Bayonne – a small region in the southwest of France – recognized for its excellent cuisine, and particularly for its foie gras.  Since the beginning of his culinary career, after finishing his professional training, Chef Wallez sought opportunities to expand his culinary knowledge After his outstanding performance at the Bristol and Plaza Athénée hotels in Paris, he decided to move to Mexico and share his expertise with world-class hotels in Cancun and the Riviera Maya. Chef Wallez’ talent has been acknowledged by fine dining restaurants and luxury hotels from Russia to the Caribbean. In 2004, he became Executive Chef of the Grand Bahia Principe hotel, where he remained for five years. Later, he held the same position at the Belmond La Samanna hotel on the island of St. Martin. In 2011, he returned to Cancun where he was appointed Executive Chef to lead the culinary team for the opening of NIZUC Resort & Spa four years, to later become Executive Chef for the Andaz Mayakoba Hotel, Grand Velas and Rosewood in San Miguel de Allende.

Chef Vincent is now responsible for the daily culinary operations of the resort’s versatile dining portfolio. From casual to fine-dining experiences, One&Only Palmilla offers exciting and authentic cuisine in a variety of restaurants, making the resort a true dining destination in the region. The resort is home to SEARED, the signature steakhouse restaurant in partnership with Michelin-starred Chef Jean-Georges Vongerichten; Suviche, which offers guests an impressive selection of sushi and Mexican ceviche incorporating local and Asian flavors; Agua, focusing on authentic Mexican cuisine with farm-to-table origins and Breeze offering stunning views of the Los Cabos coastline and a casual dining menu that caters to all tastes with Mexican & America favourites.
