One&Only Palmilla Transforms San Jose Del Cabo's Gastronomic Scene with its New Culinary Art Series

One&Only Palmilla takes guests on a culinary journey through the unique flavours of Mexico with a series of guest chef pop-ups hosted by the next generation of Mexico’s most talented culinary artists

One of Mexico's most secluded destinations on the Baja Peninsula, situated where pristine beaches meet azure waters, One&Only Palmilla brings Mexican charm to life, and has long offered guests a Mexican idyll like no other. Its ethos to pay homage to the country’s rich culture and heritage will now translate to its culinary offering, with the introduction of its Culinary Art Series, a calendar of exciting pop-ups hosted by some of the country’s most celebrated emerging Mexican chefs. Designed to showcase the varied flavours of Mexico, the Culinary Art Series will provide a superlative, and authentically Mexican design experience like no other in the region.

Offering guests, a culinary journey through Mexico, from the distinct cuisine of the North with its light Sinaloan seafood to the roast cabrito (baby goat) of Nuevo León, to the more prominent African, Caribbean and Middle Eastern influences of the south, each guest Chef will transform the resort’s ocean-side clifftop restaurant Agua over the course of a weekend, transporting the authentic flavors and unique menus from their region to the resort.

One&Only Palmilla’s Culinary Art Series promises to champion authentic Mexican fare and the gastronomic maestros that are paving the way to bring this vibrant and colourful cuisine to the forefront and will also provide an insightful opportunity for guests to explore the country via its diverse culinary landscape.

The Culinary Art Series will commence with Mexico’s former ‘Cook of the Year’ Fernando Martinez Zavala in August, when Chef Zavala of fine dining restaurant Migrante in Mexico City will take guests on a five-course

journey rooted in respect for the environment and Mexico’s maritime ecosystem, showcasing a globally inspired vision through sustainably sourced ingredients. 

"Being able to showcase and bring the Migrante menu to One&Only Palmilla is a great honour. The whole concept of Migrante, which takes its name from the mobility of humans and the transfer of their culture, customs and food, is about ‘sharing the table’, so being able to transport our kitchens to this iconic resort, and share our experience is a project I am incredibly proud of.” says Chef Fernando Zavala.  

The series will go on to feature talents such as Edgar Nuñez from internationally acclaimed restaurant Sud777 as well as Karen Drijanski who together with her son runs Mexico City’s breakfast-fare hot spot Niddo. Beyond Mexico City, the series will welcome David Castro from Valle de Guadelupe where local fauna is celebrated alongside with the culture and community that has shaped one of Mexico’s newest states as well as Xochitl Valdes whose restaurant Pancho Maiz in the center of Yacatan’s capitol of Merida is an homage to her family’s Mayan heritage and “maiz criollo” – the native corn that has for centuries been the source of sustenance to this land and its people.

The Culinary Art Series will continue into 2023, with further guest chefs to be announced in due course.  Reservations will be open to guests as well as non-guests of the resort.

Alongside Agua, One&Only Palmilla is also home to signature restaurant Seared, serving world-class steaks and seafood prepared on a wood-fired grill, and Suviche, a chic Japanese fusion restaurant named after its two signature dishes, ceviche and sushi - both of which are overseen by acclaimed Michelin-starred chef Jean-Georges Vongerichten. For elevated ‘comfort’ cuisine, guests can visit Breeze, an open-air brasserie with stunning views of the Los Cabos coastline, serving Mexican favourites.
